Summer Cake

Happy Saturday! This week I had three days off in a row, which basically never happens. I’ve been feeling a bit burnt out lately so I took this time to relax, de-stress and re-energize. Personally, a great way to do these three things is by baking. It had been a long time since I’d baked but it reminded me of the summer in my early tweens where I would watch Anna Olsen’s baking show ‘Sugar’ every Monday to Friday at 9-9:30. It was my guilty pleasure at the time.IMG_0367

I decided to make a three layer lemon cake with matcha icing. If you’re interested in the recipe you can follow me on Pinterest at Samantha Rose Hunt. The recipe is the only pin under the board CAKE. Take note that it’s a lemon poppy seed recipe, however, I couldn’t find poppy seeds in my grocery store haha. For this cake I only did Steps 5-8. For the matcha icing I just combined some butter, 1 tbsp of matcha powder, icing sugar and a little bit of milk 🙂

I topped the cake with fresh roses. To protect the cake from the stems I wrapped them in tin foil and gently pushed them in. I then surrounded the roses with fresh blueberries, strawberries, some mint, and the leftover energy bites from my last blog post. You can find that recipe here! 

Although it’s slightly lop sided and definitely over cooked I had a whole lot of fun making it and letting my creativity lead the way. I love the sense of accomplishment that you feel once everything is put together. Let me know if you like food posts! I just got the Food Network and I feel like it’s been very inspirational!
